The rot stuff

Hybrid beer styles certainly are the hot item these days, and this new wine/beer mash-up from Dogfish Head sounds amazing. I promise, you’ve never tried anything quite like it:

“For Noble Rot, 49.5% of the fermentable sugars come from grapes, and 50.5% come from grains. Two unique white wine grapes, sourced with our friends at Alexandria Nicole Cellars in Prosser, Wash., add complexity to this saison-esque science project.”

Noble Rot clocks in at 9% ABV, and on the beer side, it’s brewed with pils and wheat malt, and fermented with a Belgian yeast strain. As for the wine attributes, Noble Rot incorporates must from viognier grapes (infected with the botrytis fungus, no less) and large clusters of pinot gris grapes. So yeah, there’s a hell of a lot going on here.

This unique project ships today, so brace yourself as you’re probably about to buy something called Noble Rot.
